Keto Coffee Recipe | Vegan & Paleo - Her Highness, Hungry Me (2024)

You know what made me really sad when I started the keto diet? The fact that you can’t drink latte or cappuccino. Hello, I’m too much of a coward to drink my coffee black! Or with caffeine! I was pretty devastated for like 1 hour and then decided to try and make a dairy-free keto coffee with coconut oil, almond butter and cinnamon. And here I am sharing the recipe for the most delicious creamy keto coffee that also happens to be vegan.

Keto Coffee Recipe | Vegan & Paleo - Her Highness, Hungry Me (1)

I researched a little bit about how to make bulletproof coffee, but it required me to have butter and something called MCT oil and I didn’t have any of those at home. Plus, let’s face it, I’m drinking decaf, so there’s no way I would get “those benefits” everyone brags about. Like endless energy, focus and machine-like alertness. I decided to use whatever I had at home and my version of bulletproof keto coffee turned out to be so amazingly tasty! So good!

Pretty much as good as a cappuccino actually, but a smaller amount since I’m not adding any milk. This coffee with coconut oil is perfect even if you’re not doing keto, but want a creamy dairy-free coffee drink and don’t like dairy-free milk (me!). Also, I know it’s important for many of you: this recipe is also paleo and vegan.

How To Make Keto Coffee

Essentially what you do to make a keto coffee or bulletproof coffee is:

  • make a a coffee
  • add butter or MCT oil, coconut oil or another type of fat
  • mix all in a blender and drink

I made my coffee differently than the original bulletproof coffee recipe. I removed the butter and MCT oil (which I found out makes more than 50% of the fats in coconut oil, that’s good enough for me) and added almond butter instead.

Trust me, I tried to put only coconut oil in my coffee…Did not enjoy it as much. All I got was oily coffee. Yeah, that’s how I’d describe it, oily coffee.

Why I Add Almond Butter To Coffee?

Adding a tsp of almond butter really made a thick froth, the whole thing got creamier and so much more delicious. I’m drinking my coffee this way even now that I’m not doing keto anymore. It’s just so good and helps me reduce my dairy consumption, which is something I’m trying to do right now.

Any Benefits of This Keto Coffee?

You mean besides that it’s a warm, creamy and tasty drink? Well, as I mentioned I didn’t get all the crazy energy and alertness everyone talks about, but again: I drink decaf. What my coffee did though was that I really didn’t get hungry for the longest time. So it does suppress appetite if that’s something you’re struggling with.

Note that this serving of coffee is not too big – it would fill like 2/3 cup. It’s just the right amount for me, but if you want more coffee and need a bigger serving of this, use 1 tbsp coconut oil, 1 tbsp almond butter and a full cup of coffee. You can also add stevia to add some sweetness if you’d like. Otherwise, follow the instructions below.
