Easy Chicken and Waffles recipe made with homemade chicken tenders, frozen waffles, and a spicy mayo dipping sauce. A kid friendly dinner!
So one of the first recipes I thought of for Eggo’s Waffle Off contest was a twist on traditional chicken and waffles. I have to be honest, I’ve never actually had a classic “chicken and waffles” meal before. At first, I thought it sounded a little bit of an odd combination.
But I have to admit, after trying this I will never scoff again! First, my kids thought this was so much fun for dinner. You can’t beat homemade chicken fingers, and the waffle strip “fries” just put it over the top! And second, the dipping sauce is OUT OF THIS WORLD!! It’s extremely easy to whip up and so much better than plain old store bought honey mustard.
As a side note, how cute are these blue baskets?? I actually found them last year in the Target dollar spot, so keep your eyes peeled. It’s such a simple way to make dinner exciting for the family!

Ingredients
- 1 lb boneless skinless chicken tenders
- 2 eggs beaten
- 1 1/4 cup Italian bread crumbs
- 1/2 cup grated Parmesan cheese
- 4 frozen waffles
- 1 cup mayonnaise
- 1/4 cup maple syrup
- 3 teaspoons prepared horseradish
- 1 teaspoon dry mustard
Instructions
Combine Italian bread crumbs and Parmesan cheese in a shallow bowl.
Place beaten eggs in a second shallow bowl.
One at a time, dip chicken tenders in eggs and then in bread crumbs.
Place breaded tenders on a baking rack placed on top of a cookie sheet.
Repeat for remaining chicken tenders.
Bake at 375 for 20-30 minutes, or until chicken is done by reaching an internal temperature of 165 degrees.
Meanwhile, combine mayo, maple syrup, horseradish, and dry mustard in a bowl and set aside.
Toast waffles and cut into strips.
Place equal amounts of chicken tenders and waffle "fries" in basket along with dipping sauce.

Chicken and waffles is a big thing here in central PA. It is one of the first things that I learned to cook when I got married and places will even have big chicken and waffles fundraiser dinners. It isn't much different than an open-faced, hot turkey sandwich if you have ever had one of those. This really is a twist! Thanks for posting!

That's funny Lindsay, where in Central PA? I live in Lancaster County, though I'm not surprised I still haven't experienced or heard of chicken and waffles. We've only been here for 4 years, I grew up in Philadelphia.
